RESEP "AYAM BAKAR MADU PEDAS MANIS"

"SWEET SPICY HONEY ROASTED CHICKEN" RECIPE"

(INDONESIAN LANGUAGE)

BAHAN-BAHAN :
  1.  3 sdm madu (sesuai selera)
  2.  1/2 sdt kaldu ayam bubuk (sesuai selera)
  3.  1 sdt kaldu jamur (sesuai selera)
  4.  1/2 sdt garam (sesuai selera)
  5.  1/2 sdt lada bubuk (sesuai selera)
  6.  1/2 sdt ketumbar bubuk (sesuai selera)
  7.  1 batang serai (geprek)
  8.  1 ruas jahe
  9.  1 ruas lengkuas
  10.  3 sdm kecap manis (sesuai selera)
  11.  2 sdm kecap asin (sesuai selera)
  12.  40 gram gula merah (sesuai selera)
  13.  1 sdt margarin (sesuai selera)
  14.  1 sdt gula pasir (sesuai selera)
  15.  300 ml air (sesuai selera)
  16.  5 sdm bumbu dari ungkepan ayam (sesuai selera)
MARINASI AYAM :
  1.  500 gram daging ayam (cuci bersih)
  2.  1 jeruk nipis (potong-potong dari samping)
  3.  1/2 sdt garam (sesuai selera)
  4.  1/2 sdt lada bubuk (sesuai selera)
BUMBU HALUS (Blender) :
  1.  5 siung bawang merah
  2.  4 siung bawang putih
  3.  20 gram cabai merah keriting (sesuai selera)
  4.  1 cabai rawit (sesuai selera)
  5.  Sedikit minyak / air
CARA MEMBUAT "AYAM BAKAR MADU PEDAS MANIS" :
  1.  MARINASI AYAM :
     Peras jeruk nipis, ratakan pada daging ayam. Lalu taburi sedikit garam dan lada bubuk.  Dan simpan di dalam kulkas selama 1 - 2 jam atau selebih (sesuai selera)
  2.  Panaskan teflon. Masukkan bumbu halus. Aduk dan masak sampai harum
  3.  Masukkan serai, jahe, dan lengkuas. Aduk-aduk dan masak sampai sedikit kering
  4.  Masukkan daging ayam yang sudah di marinasi, kaldu ayam, kaldu jamur, garam, lada bubuk, dan ketumbar bubuk. 
  5.  Lalu tuang 300 ml air (sesuai selera) dan gula merah. Ungkep dan masak sampai air menyusut dan mengental. Jika air sudah surut dan mengental, matikan kompor
  6.   Pisahkan daging ayam dan bumbu. Pindah bumbu ke dalam wadah (Bumbu akan dicampurkan ke dalam Bumbu Balur) 
  7.  Panaskan Grill Pan. Masukkan 1 sdt margarin lalu masukkan daging ayam. Olesi dengan bumbu sampai merata dan panggang sampai berwarna kecolatan.
    (Kita lakukan sebanyak 2x agar bumbu meresap ke dalam ayam)
  8.  Jika sudah matang, angkat dan "AYAM BAKAR MADU PEDAS MANIS" siap untuk disajikan

  8.  1/2 tsp of ground pepper (suit your taste)
  9.  1/2 tsp of coriander powder (suit your taste)
  10.  20 grams of curly red chili (suit your taste)
  11.  1 cayenne pepper (suit your taste)
  12.  1 lemongrass stalk (smashed)
  13.  1 piece of ginger
  14.  1 segment of galangal
  15.  3 tbsp of sweet soy sauce (suit your taste)
  16.  2 tbsp of soy sauce (suit your taste)
  17.  40 grams of brown sugar (suit your taste)
  18.  1 tsp of margarine (suit your taste)
  19.  1 tsp of sugar (suit your taste)
  20.  300 ml water (suit your taste)
  21.  5 tbsp seasoning from chicken boil (v)
CHICKEN MARINADE :
  1.  1 lime (sliced ​​from the side)
  2.  1/2 tsp of salt (suit your taste)
  3.  1/2 tsp of ground pepper (suit your taste)
HOW TO MAKE "SWEET SPICY HONEY ROASTED CHICKEN" :
  1.  CHICKEN MARINATION:
     Squeeze the lime, spread it over the chicken. Then sprinkle a little salt and pepper powder. And store in the refrigerator for 1-2 hours or more (suit your taste)
  2.  FINE CONDITIONING:
     Add the red onion, garlic, curly red chili, cayenne pepper, and pour a little water. Blend until smooth
  3.  Heat the teflon. Add ground spices. Stir and cook until fragrant
  4.  Add 1 stalk of lemongrass (smashed), 1 segment of ginger, and 1 segment of galangal. Stir and cook until slightly dry
  5.  Add the marinated chicken, chicken stock, mushroom broth, salt, ground pepper and coriander powder
  6.  Then pour 300 ml of water (suit your taste) and add brown sugar (suit your taste).
     Boil and cook until the water shrinks and thickens. When the water has receded and thickened, turn off the stove
  7.  Separate the chicken meat and seasonings. Transfer the spices to the container
     (The seasoning will be mixed into the Wrapping Spices)
  8.  WRAPPING SPICES :
     Prepare the container. Enter the sweet soy sauce, honey, soy sauce, and 5 tbsp of seasoning from chicken boil (suit your taste). Stir until everything is evenly mixed
  9.  Heat the Grill Pan. Add 1 tsp of margarine then add the chicken. Brush with wrapping spices until evenly distributed and bake until brown.
     (We do this twice so that the wrapping spices seep into the chicken)
  10.  When it's cooked, take it out and the "SWEET SPICY HONEY ROASTED CHICKEN" is ready to be served
