RESEP "AYAM SUWIR KEMANGI PEDAS NAMPOL"
"AYAM SUWIR PEDAS NAMPOL" RECIPE

(INDONESIAN LANGUAGE)
BAHAN-BAHAN :
- 500 gram daging ayam (cuci bersih)
- Daun kemangi (secukupnya)
- 4 siung bawang merah
- 3 siung bawang putih
- 1/4 sdt kunyit bubuk (sesuai selera)
- 1 sdt kaldu ayam bubuk (sesuai selera)
- 1,5 sdt kaldu jamur
- 1/2 sdt lada bubuk
- 1/2 sdt garam (sesuai selera)
- 2 lembar daun jeruk
- 2 cm kencur (sesuai selera)
- 2 butir kemiri
- 1 buah tomat (sesuai selera)
- 30 gram cabai merah keriting (sesuai selera)
- 6 cabai rawit (sesuai selera)
- 1,5 sdt gula pasir (sesuai selera)
- 50 ml air (sesuai selera)
- Minyak (secukupnya)
PELENGKAP :
- Bawang goreng
CARA MEMBUAT "AYAM SUWIR KEMANGI PEDAS NAMPOL" :
- Siapkan teflon. Panaskan minyak. Masukkan 500 gram daging ayam. Goreng sampai matang (jangan sampai kering). Jika sudah matang, angkat, tiriskan, dan suwir-suwir
- Bumbu Halus : bawang merah, bawang putih, kemiri, 2 cm kencur, 1 buah tomat, cabai merah keriting, cabai rawit, dan sedikit minyak (sesuai selera). Blender sampai halus
- Panaskan minyak (bekas menggoreng ayam. Lalu masukkan bumbu halus. Aduk merata dan tumis sampai harum
- Masukkan daun jeruk. Aduk merata dan tumis sampai berwarna kecoklatan
- Masukkan ayam yang sudah di suwir-suwir. Aduk sampai semua tercampur rata
- Tuang 50 ml air (sesuai selera). Aduk merata
- Masukkan kaldu ayam bubuk, garam, kaldu jamur, lada bubuk, kunyit bubuk, dan gula pasir. Aduk merata dan masak sampai air surut
- Masukkan daun kemangi (secukupnya)
- Aduk sampai semua tercampur rata dan masakn sebentar
- Koreksi rasa. Jika sudah pas dan matang. Matikan kompor
- Pindah masakan ke wadah
- Taburi bawang goreng diatasnya

- 2 lime leaves
- 2 cm of kencur (according to taste)
- 2 hazelnuts
- 1 tomato (to taste)
- 30 grams of curly red chili (according to taste)
- 6 cayenne pepper (according to taste)
- 1,5 tsp of sugar (according to taste)
- 50 ml of water (according to taste)
- Oil (according to taste)
COMPLEMENTARY :
- Fried shallots (Optional)
HOW TO MAKE "AYAM SUWIR KEMANGI PEDAS NAMPOL" :
- Prepare teflon. Heat the oil. Add 500 grams of chicken meat. Fry until cooked (don't let it dry). If it's cooked, remove it, drain it, and shred it
- Fine Seasonings: onion, garlic, candlenut, 2 cm kencur, 1 tomato, curly red chili, cayenne pepper, and a little oil (according to taste). Blend until smooth
- Heat the oil (used for frying the chicken. Then add the ground spices. Stir well and fry until fragrant
- Add the lime leaves. Stir well and saute until brown
- Add the shredded chicken. Stir until everything is evenly mixed
- Pour 50 ml of water (according to taste). Stir evenly
- Add chicken stock powder, salt, mushroom stock, ground pepper, turmeric powder, and sugar. Stir well and cook until the water recedes
- Add basil leaves (according to taste)
- Stir until everything is well mixed and cook for a while
- Taste for correction. If it is fit and ripe. Turn off the stove
- Transfer the food to a container
- Sprinkle fried onions on top
