RESEP "CEKER AYAM PEDAS HUUH-HAAH"
"SPICY CHICKEN FEET"

BAHAN-BAHAN :
- 500 gram ceker ayam
(bersihkan kulitnya, potong kukunya, dan cuci sampai bersih) - 7 siung bawang merah
- 5
siung bawang putih
- 1 sdt garam (sesuai selera)
- 1 sdt ketumbar bubuk
- ½ sdt kaldu jamur (sesuai selera)
- ½ sdt kaldu ayam bubuk (sesuai selera)
- 1 ruas jahe
- 4 lembar daun jeruk
- 1 ruas lengkuas
- Sedikit kunyit (sesuai selera)
- 2 butir kemiri
- 11 cabai merah keriting (sesuai selera)
- 5 cabai rawit (sesuai selera)
- 1,5 sdm gula pasir (sesuai selera)
- Air (sesuai selera)
- Sedikit minyak (sesuai selera)
CARA MEMBUAT "CEKER AYAM PEDAS HUUH-HAAH" :
- Didihkan air. Masukkan 500 gram ceker ayam
- Rebus sampai mendidih dan empuk. Jika sudah dirasa matang dan empuk, angkat dan tiriskan
- BUMBU HALUS :
Masukkan 7 siung bawang merah, 5 siung bawang putih, sedikit kunyit, jahe, 11 cabai merah keriting (sesuai selera), 5 cabai rawit (sesuai selera), 2 butir kemiri, dan sedikit minyak (sesuai selera). Blender/uleg sampai halus - Panaskan teflon. Masukkan bumbu halus (bisa di tambah sedikit minyak)
- Aduk dan tumis sampai harum
- Masukkan 4 lembar daun jeruk dan 1 ruas lengkuas. Tumis sampai bewarna sedikit kecoklatan
- Masukkan
kaldu ayam bubuk, kaldu jamur, ketumbar bubuk, dan garam
(sesuai selera). Aduk merata - Masukkan ceker ayam yang sudah di cuci bersih. Aduk sampai semua tercampur rata
- Tuang
sedikit air dan masukkan 1,5 sdm gula pasir (sesuai selera)
(bisa diganti gula merah (sesuai selera) - Aduk merata. Masak sampai sedikit kering. Jangan lupa koreksi rasa. Lalu matikan kompor

INGREDIENTS :
- 500 grams of chicken feet

- 1 tsp of coriander powder
- ½ tsp of mushroom stock (suit your taste)
- ½ tsp of chicken stock powder (suit your taste)
- 1 piece of ginger
- 4 lime leaves
- 1 segment of galangal
- A little turmeric (suit your taste)
- 2 candlenuts
- 11 curly red chili (suit your taste)
- 5 cayenne pepper (suit your taste)
- 1.5 tbsp of sugar (suit your taste)
- Water (suit your taste)
- A little oil (suit your taste)
How to Make "SPICY CHICKEN FEET" :
- Bring water to a boil. Add 500 grams of chicken feet
- Boil until it becomes tender. If it feels cooked and tender, remove and drain
- FINE CONDITIONING:
Add 7 cloves of shallot, 5 cloves of shallot, a little turmeric, ginger, 11 curly red chilies (suit your taste), 5 cayenne peppers (suit your taste), 2 candlenuts, and a little oil (suit your taste). Blend / knead until smooth - Heat the Teflon. Add the ground spices (can add a little oil)
- Stir continuously and fry until fragrant
- Add 4 pieces of lime leaves and 1 segment of galangal. Saute until slightly brown
- Add chicken stock powder, mushroom stock,
coriander powder, and salt
(suit your taste). Stir evenly - Add the chicken feet that have been washed clean. Stir until everything is evenly mixed
- Pour a little water and add 1.5 tablespoons of sugar (suit your taste)
(can be replaced with brown sugar (according to taste)) - Stir well. Cook until slightly dry. Don't forget to taste for correction. Then turn off the stove
- “SPICY CHICKEN FEET” is ready to be served
